Chicken Soup

Using the largest pot you have, fill half of it with chicken parts (legs and thighs make the most flavorful soup).

Ten carrots Peeled
Add to chicken.
Add the green parts of scallions (low FODMAPS)
Add Parsley
Season with salt
Fill pot with water

Simmer for about 4 hours and then strain soup through a colander or strainer. After the first hour of cooking, skim off the fat and impurities. Its fine to not skim all fat since fat from animals sourced well carries fat soluble vitamins and nutrients. 
Puree carrots in blender and return to broth
Remove skin and bones from chicken parts and return to broth.

Onions, celery, and parsley should not be used at the start of the dietary regimen because the fibrous parts of these vegetables may cause problems.
Scallions may be used instead of onion, these are less fermentable (Low FODMAP).
